With all the hate being spread in the world right now involving race, religion, and political belief, there is one thing most people tend to agree on – bacon ROCKS. I’ve even chatted with vegan and vegetarian friends who will admit that although they don’t eat it anymore, bacon is delicious and once upon a time they would devour it.
To me, bacon is still considered a special treat food, and it’s not something I eat everyday. Many diets do include bacon on their everyday meal plans – keto and paleo, for example. “Bacon and eggs” is my forever favorite breakfast… probably because I’m Southern. Savory and full of protein.
Many years ago, a friend would make these Bacon Wrapped Green Beans for parties and events, and everyone loved them. I ended up figuring out how to make them myself, and started taking them to family dinners and Friendsgivings. The first time I took them to a family dinner, everyone about fell out of their chair. “Can you always bring those?” “WOW! Those are AMAZING!” I’m not saying your grandmomma’s southern green beans and potatoes aren’t good, but switch it up and bring these to your next party. They make a wonderful appetizer or side dish. Easter is only a few weeks away!
Bacon Wrapped Green Beans
- 16 oz frozen whole green beans
- 1 lb sliced bacon slices halved
- ½ cup melted butter
- 2 tbsp brown sugar (or coconut sugar)
- 1 clove garlic pressed
- Pre-heat oven to 350 degrees F.
- Set out the bacon, green beans and casserole dish in an assembly line.
- Lay out a half strip of bacon. Place a small bunch of green beans (6 or 7) onto the strip of bacon and roll up into a bundle. Place the bundle into the casserole dish, seam side down.
- Repeat with remaining bacon strips and green beans. These can be packed pretty tight in the pan, just know that if the bacon is touching another bundle they take some prying to get apart.
- Mix sauce ingredients together with a pastry brush, and brush sauce on top of each bacon bundle.
- Bake until browned and heated through, usually about 20-25 minutes.
